With the warmer weather right around the corner, it’s always fun to get into the summer mood by looking on Pinterest for healthy, easy and fun recipes that are perfect for summertime. I know that I am always drawn to DIY popsicles. My personal favorites are ones that are fruity, and are easy to make. Here is a yummy recipe that I think will be delicious, healthy and fast to make. Oh, and let’s not forget that these will definitely look pretty on our Instagram feeds too!  

Ingredients:

(Makes 4 medium sized Popsicle’s)

12 strawberries

2 ripe mangoes

How to make:

  • 1. Cut stem off of strawberries and chop into pieces. Blend in a blender until you get a smooth puree.

  • 2. Add ½ to 1 tablespoon water if needed.

  • 3. Peel the skin on mangoes and chop into pieces. Blend until you get smooth puree.

  • 4. Alternatively pour each fruit mix into the popsicle molds.

  • 5. Cover and place it in freezer for 15 minutes.

  • 6. Remove from the freezer and insert the Popsicle stick now that way the stick stays in its place.

  • 7. Cover and freeze for another 30 minutes.

  • 8. Just before serving, remove the mold from freezer and dip the mold in warm water for 5 to 7 seconds. Then gently pull the Popsicle out holding on the stick. This should help the Popsicle come out of the mold easily without breaking.
