Healthy Holiday Breakfasts

 

Every year around Thanksgiving and Christmas it becomes harder and harder to eat healthy. There is always an assortment of candies around and big meals but here are a few breakfast recipes so you can at least start out the day healthy.

 

Ingredients: (serves 4) Chai Breakfast Pudding: Try this instead of figgy pudding

  • 1/4 teaspoon Celtic sea salt

  • 40 g (1/4 cup) hazelnuts

  • 120 g (3/4 cup) raw cashews

  • 1/2 tsp alcohol-free vanilla extract

  • 6 drops stevia liquid, or 2 tbsp sweetener of your choice (such as xylitol or rice malt syrup)

  • 1/2 tsp cardamom

  • 1/2 tsp nutmeg

  • 1/2 tsp ground cinnamon

  • 30 g (1/4 cup) chia seeds

  • 1/2 cup chopped nuts, to serve

  • Strawberries, for on top

  • Almond milk, to serve

Directions: Combine the salt, hazelnut, cashews, vanilla, stevia and spices with three cups of water and stir in a blender.
