Healthy Breakfast Ideas to Kick Off the Semester

Thinking about making a New Years resolution to be healthier this year but don’t know where to start? Look no further than the first, most important meal of the day: breakfast! Here are 6 healthy breakfast ideas that are sure to keep you satisfied and your taste buds pleased.

Flourless Banana Oat Pancakes

Ingredients:

·      2 bananas

·      2 eggs

·      ½ cup rolled oats

·      ½ tsp. baking soda

·      A pinch of salt

Instructions:

1.     Crack the eggs in a bowl and combine all other ingredients.

2.     Mash together (you can use a blender for this) until smooth.

3.     Heat a nonstick pan over med/low heat.

4.     Cook spoonfuls of batter until golden on each side

5.     Serve with fresh fruit and maple syrup.

 

Berry Parfait

 

Ingredients:

·      1 cup yogurt (go Greek to pack in the protein)

·      ½ cup granola

·      2 cups berries (raspberries, strawberries, blueberries, etc.)

·      2 tbsp. honey (optional)

Instructions:

1.     Spoon ¼ yogurt into a dessert glass and top with some of the granola and berries.

2.     Repeat with layers of each sprinkling honey (optional) throughout.

 

Avocado Toast with Egg

 

Ingredients:

·      1 avocado

·      1 tsp. lemon juice

·      2 eggs

·      2 pieces whole wheat bread

Instructions:

1.     Toast the bread in a toaster.

2.     Cut the avocado lengthwise and remove the pit. Scoop out the avocado flesh and put it in a bowl. Add the lemon juice and stir with a fork.

3.     Heat skillet and cook eggs sunny side up.

4.     Spread the avocado on the toast and top each with an egg. Sprinkle with salt and pepper and voila! 

 

PB&J Waffles

 

Ingredients:

·      1 whole wheat waffle

·      2 tbsp. peanut butter

·      Strawberries

Instructions:

1.     Toast the waffle in the toaster and cut in half.

2.     Spread the peanut butter on both halves of the waffle.

3.     Thinly slice the strawberries and layer on top of the peanut butter.

4.     Eat slices separately or combine for a PB&J waffle sandwich!

 

Blueberry Mug Muffin

 

Ingredients:

·      ¼ cup flour

·      1 tbsp. sugar

·      1/8 tbsp. baking powder

·      3 tbsp. milk

·      1 tbsp. coconut oil (melted)

·      ¼ cup blueberries

Instructions:

1.     In a microwave safe mug, combine flower, sugar, and baking powder.

2.     Add the milk and coconut oil and stir.

3.     Place berries on top.

4.     Microwave on high for 90 seconds.

5.     Let mug cool and enjoy! 

 

Apple Cinnamon Oatmeal

 

Ingredients:

·      ½ cup rolled oats

·      1 cup water

·      ½ medium apple (diced)

·      1 tbsp. brown sugar

·      ½ cup 2% milk

·      1 tsp. ground cinnamon

Instructions:

1.     In a small saucepan, boil the water and add the oats (med/low heat) and cook covered for 5-8 minutes.

2.     Heat another small saucepan (med/low heat) and add the apples and brown sugar. Stir frequently until the apples are soft, about 2 minutes.

3.     Add apples to the oatmeal mixture. Stir in the milk and cinnamon.

4.     Pour into a bowl and enjoy!
