Her Campus Durham’s Favourite Christmas Recipe: Christmas Tree Decoration Biscuits

It’s starting to feel more and more Christmassy here in Durham! With vacation fast approaching, what better way to get in the Christmas spirit than a spot of festive baking? Wrap up in your fave woolly jumper, make yourself a big mug of hot chocolate and grab your pals to make some of these fab biscuits:

You will need:

Biscuits:

  • 100g unsalted butter  (softened)
  • 100g caster sugar
  • 1 egg (beaten)
  • 1 tsp vanilla extract
  • 275g plain flour

Icing:

  • 400g icing sugar
  • 3-4 tbsp water
  • 2-3 drops food colouring of your choice

Method:

  1. Don’t forget to preheat the oven to 190C/375F/Gas 5 and line a baking tray with greaseproof paper ready for your delicious biscuits!
  2. Cream the butter and sugar together in a bowl until light and fluffy
  3. Beat in the egg and vanilla extract a little at a time until well combined
  4. Stir in the flour a little at a time
  5. Roll out the dough on a lightly floured work surface to an approximate thickness of 1cm
  6. Using biscuit cutters of your choice, carefully cut shapes out of the dough and place these onto the baking tray. Remember to cut a hole in the top of each biscuit in case you’d like to use them to decorate the tree-you can do this using a straw.
  7. Bake the biscuits for 8-10 minutes until pale golden brown and set them down to cool
  8. To make the icing, sift the icing sugar into a large mixing bowl and stir in water to create a smooth mixture- you can also add food colouring of your choice to decorate them. Decorate as desired! We love these fab star ones, but other ideas include snowmen, reindeers and baubles. It’s time to get creative gals!
