There are a number of salsa recipes out there, each claiming to be the greatest and most authentic. I am here to give you my special salsa recipe, and I can confidently say it is not the most superb salsa around. It is, however, healthy, easy, and mighty tasty. This chunky salsa has been taste tested by an assortment of crowds, each of which have bowed down to it’s bursting flavors. Perfect for any tailgate or dull Tuesday night, this dish is a simple way to add some color to your spread. Take it a step further and add it on top of a grilled chicken breast or in an omelette. Creatively, or simply with tortilla chips, this recipe is sure to satisfy.

Ingredients:

– 1 16oz can black beans
– 1 16oz can sweet corn
– ½ sweet onion, diced
– 4 medium tomatoes, diced
– 1 lime, juiced
– 1 c green grapes, cut into fourths
– 1/3 c chopped cilantro
– 2 tsp garlic powder
– Salt and pepper to taste

Note: Feel free to add more or less of any ingredient if you so desire. Also, go through your refrigerator and add different fruit (watermelon, cherries, blueberries, etc.) if you are feeling adventurous.

Directions:

Chop all ingredients and mix them together in a large bowl. Be sure to taste your salsa throughout preparation, so you keep your spirits high and know what to add for maximum salsa success. Enjoy!
