Pumpkin Spice Chocolate Chip Muffins

  You don't have to be a pumpkin lover to enjoy these muffins. Made with only three simple ingredients, this treat is bound to please any taste bud. The delicious chocolate accent turns any humdrum breakfast into a special occasion. Go on and try this recipe once, and I promise you won't be disappointed! Ingredients: - 1 15oz. can of pumpkin - 1 regular bag of chocolate chips - 1 box of spice cake mix - 12 cupcake holders Directions: 1) Preheat oven to 350 degrees. 2) Combine the can of pumpkin, bag of chocolate chips, and the dry cake mixture into a large bowl.   With winter quickly approaching, many of us jump at any opportunity to relive a precious bit of summer. Some travel to tropical destinations, while others secretly treat their pale bodies to fifteen minutes in a tanning bed. Personally, I find my summer escape in food. Below is a recipe near and dear to my family’s heart, as it ceases to disappoint. Known by many names, a “fruit pizza” is a simple dessert that is beyond aesthetically pleasing. With room to creatively give this dish your own distinctive touch, fruit pizza-making is a great way to get people of all ages into the kitchen to produce something beautiful. Go on and splurge on the overpriced fruit a bit, since it is out of season… once you taste what you have created it will all be worth it...

Tantalizing Tapas

  As a true lover of food, I find enjoyment in trying new restaurants, whether it be a family owned diner or a trendy new steakhouse. I tend towards meals with multiple tastes and side items because I find single-item entrees drab and boring. For this reason, I am in love with tapas: small-portioned dishes where one can taste an array of food with different flavors and influences. Listed below are my favorite tapas restaurants along with my recommendations on what to order! 1) Café Ba-Ba-Reeba  (Chicago, IL) This particular restaurant is a hidden Spanish gem in the heart of Lincoln Park. If you happen upon Café Ba-Ba-Reeba in the summer, grab a glass of sangria and enjoy their infamous spiced potatoes and paella on their outdoor patio....

Mighty Fine Pumpkin Seeds

If your upbringing was anything like mine, wasting food or leaving the last few sips of milk in your cup was a big NO-NO. I thought my mom was harsh when it came to food, but that was nothing compared to my grandmother who to this day uses every last bit of the turkey at Thanksgiving, bones and all. Although at times this practice seemed a bit much, my family’s conservative tendency has come in handy when carving pumpkins. Go ahead and treat yourself; stop at one of the many roadside pumpkin stands in the greater Greencastle area and let your creative juices flow as you proudly carve your very own pumpkin (or as 6-year-old Maggie would say, punkin). Over fall break I seized my opportunity and carved pumpkins with my family....
