I have to tell you about this recipe. I’ve made it four times in the last two weeks, and every time I do, my housemates start whining.

“What are you making?”

“It smells so good!”

“Is it that avocado pasta again?”

Yes. Yes it is. And because avocados are one of those so-called “superfoods” that are all the rage these days, I’ve decided to call this recipe Super Pasta. Don’t be skeptical about putting avocado on your pasta. I promise this is yummy.

Some perks:

  1. It’s delicious.
  2. It’s healthy!
  3. It can be made vegan! (Or the carnivores out there can throw in some chicken so they don’t start feeling too… veggie-ish.)

Let’s not waste another moment of your time. Without further ado, presenting:

 

Super Pasta (Pasta with Avocado “Cream” Sauce)

½ cup dry pasta

½ an avocado

¼ of an onion

a clove of garlic

a bit of olive oil

1 Tbs. tomato sauce

¼ cup milk (or soymilk or coconut milk)

salt & pepper to taste

(½ a breast of chicken)

This recipe serves one.

Cook your pasta according to the recipe on the box.

Meanwhile, chop the onion and mince the garlic. Throw into a pan with a few teaspoons of olive oil, and sauté over medium-low heat. If desired, cube the chicken, add it to the pan, and cook until the chicken is no longer pink and the onions have gone clear. Then add the salt & pepper, and stir in the tomato sauce.

While everything is cooking, slice a (ripe!) avocado in half. A ripe avocado will be slightly soft when you squeeze it. Pull the halves apart. Scoop the flesh out of one half and into a bowl. Wrap the other half in plastic, and stick it back in the fridge. (Leaving the pit in the unused half will keep it from going brown.) Mash the half in the bowl with the back of a fork.

Combine onion mixture, pasta, and avocado in the bowl, and mix until well combined. Stir in the milk to help smooth things out. And voilà! You have the perfect avocado cream sauce for your pasta!
