Who said you had to give up sweets when going vegan? This recipe for vegan chocolate chip cranberry oatmeal cookies is absolutely to die for – and it’s 100% cruelty free! Courtesy of my friend Kaylee for sharing this awesome recipe find, I was able to taste them for myself and they were delicious! If you decide to try this recipe out, let us know what you thought!
Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp sea salt
- 2 tsp cinnamon
- 1 cup vegan butter (room temperature)
- 1 cup brown sugar
- 1 cup white sugar
- ¼ cup non-dairy milk
- 2 tsp vanilla extract
- 1 mashed ripe banana
- 2 cups rolled oats
- 1 cup dried cranberries
- 1 cup vegan chocolate chips
Instructions:
- Preheat the oven to 350*F. In a large mixing bowl combine flour, baking soda, baking powder, sea salt, and cinnamon.
- In a separate bowl combine the vegan butter and sugars, and mix well until it reaches a creamy texture. Then add vanilla extract, non-dairy milk, and a mashed banana, and mix until well combined.
- Combine the wet and dry mixtures and add in the rolled oats, cranberries, and chocolate chips. Make sure the dough is well combined.
- Lay out roughly a tablespoon of cookie mixture for each cookie, and slightly flatten them on the baking sheet. Bake on parchment lined cookie sheets for about 12 minutes, or until they reach your preferred level of crunchiness!
