Magic Mic{rowave} Meals

We don’t all have the luxury of a suite kitchen (complete with limited counter space and unpredictable ovens!), but if you can get your mitts on a microwave here are some quick recipes. You may have more ingredients than you think (old bananas from Hewitt anyone?), but if not, West Side Market is open 24/7 (they were open during Sandy) and don’t feel shy to ask around- what kind of neighbor wouldn’t lend 2 tablespoons of sugar?

BEFORE YOU START:

·      Make sure the mug is microwave safe!

·      Don’t microwave forks, tin foil, or any bits of metal

·      Use good judgment- if you think the batter will overflow and make a mess, split the mixture into two mugs

·      Remember: if you put something in the microwave for three minutes it will be HOT HOT HOT!!! Don’t get burned!

Banana Bread in a Mug (adapted from Pass the Sushi)

Ingredients:

§  Non-stick cooking spray

§  3 tablespoon flour

§  1 tablespoon granulated sugar

§  2 tablespoon brown sugar

§  1/8 teaspoon salt

§  1/8 teaspoon baking powder

§  1/8 teaspoon baking soda

§  1/4 teaspoon vanilla extract (optional)

§  1 tbsp vegetable oil (alternative: 1 tbsp applesauce)

§  1 tablespoon milk (optional)

§  2 ripe bananas, mashed

Get fancy with it: add 2 tbsp chocolate chips

Preparation:

1.    Butter the sides of the mug and cover in flour or use nonstick cooking spray.

2.   In the mug, whisk flour, sugar, salt, baking powder, and soda. Mix in vanilla, oil, milk and mashed banana.

3.   Put it in the microwave for three minutes. Let the mug cool.

 

Coffee Cup Quiche (adapted from The St. Louis Post)

Ingredients:

·      1 egg

·      1 1/2 tablespoons milk

·      Salt & pepper (to taste)

·      1/4 of a bagel (or baguette) torn into small pieces

·      a few pinches of chedderella (cheddar+mozzerella)

·      1/2 slice prosciutto or ham torn into small pieces (optional)

·      Fresh thyme leaves or fresh chopped chives

·       Dijon mustard

For the epicurious: dice 3 grape tomatoes, 4 leaves of spinach, and 1 mushroom then throw it in

Preparation

1.    Butter and flour the inside of the mug or spray with nonstick cooking spray.

2.   Crack an egg in the mug and beat with a fork.

3.   Add bagel, prosciutto, milk, salt and pepper.

4.   Mix well

5.    Microwave on high for 1 minute 10 seconds or until done. Let mug cool.

6.     Garnish with mustard and fresh thyme or chives.

 

Chocolate Chip Cookie Dough Mug Cake (from Babble.com)

Ingredients

·      1 egg

·      3 tablespoons of brown sugar

·      1/3 cup of flour

·      1 tablespoon of softened butter

·      3-4 tablespoons of (mini) chocolate chips

 

Preparation

1.    Butter and flour the mug or spray with nonstick spray.

2.   Crack an egg in the mug.

3.   Add in brown sugar, four, butter, and chocolate chips.

4.   Mix your cake together with a spoon.

5.    Microwave for 1.5-2 minutes or until done (knife test: if you stick a knife through the top, does it come out clean?).

6.   Let cool and serve with a scoop of ice cream.
