4 Healthy Meals That Don’t Require A Stove

When you’re in college there isn’t a lot of time to make meals from scratch, especially if you live in the dorms where you don’t have a lot of access to a kitchen. It can be hard to find meals that are both healthy and fast and don’t come out of a box. The following recipes will keep you full and fabulously ready for the upcoming swimsuit season.

1. Bell Pepper Sandwich

Sandwiches are always a perfect standby when you’re on the go, but if you’re like me your diet doesn’t include bread. A bell pepper sandwich is a perfect substitute. Just cut the bell pepper in half, dump the seeds, and add your toppings of choice. My favorite version is adding a microwaved hot dog, turkey, and cheddar cheese.

2. Stuffed avocado

This process is almost the same as above, but you can add virtually anything and it will taste good if you like avocado! After you take out the seed add anything you want-Chicken salad, Pico de gallo, lunchmeat, Carolina caviar, etc. It is hard to get sick of this recipe because you can add something different every time.

3. Mexican Shrimp cocktail

Forget what you’ve heard about shrimp cocktail. This cold soup is amazing and perfect for hot summer days. Add tomato juice, shrimp, chunks of avocado, salt, lime, cilantro, and onion.

4. “Pulled pork tuna”

This dinner may be the easiest on this list and is great to keep in your pantry when you don’t have time to get fresh produce. The steps are easy. Open a can of tuna. Heat in the microwave (but not in the can!) Add barbeque sauce. So simple!

These are four of my favorites, but explore and make your own! Get creative with your veggies; you can “stuff” a lot of them with whatever ingredients you want. Try stuffed mushrooms or lettuce wraps to replace sandwiches, and salads can be made more exciting with sunflower seeds, chick peas, and different cheeses and dried fruit! These are some of the easiest recipes, but taking a little extra time to plan out your meals and buy unique ingredients goes a long way into making your meals more fun and tasty.
