Easy Fall Recipes to Keep Homesickness at Bay

This article is written by a student writer from the Her Campus at American chapter.

Well, it’s that point in the semester again. Midterms are upon us, we are fighting the Freshmen Plague, and the seasons are changing. While this is a welcome change for some, it is also the time of year many begin to miss home the most, or at least start missing Mom’s comfort food! To get you through this slump, I have got some easy and delicious fall recipes that you can make in any dorm kitchen (even Clark).

Baked Apple:

While Pumpkin Spice is a beautiful thing that I recommend no one go without, it is nice to mix things up a bit. This Baked Apple Recipe is perfect for Treat-Yo Self Tuesday! However, while this decadent beauty is full of sweet and yummy goodness, it isn’t exactly a well-balanced healthy meal.

Roasted Chicken with Root Vegetables:

For those of you searching for that home-cooked flavor without the guilt, try this budget-friendly recipe for Roasted Chicken with Root Vegetables. Your stomach, and your taste buds, will thank you.

Vegetable Soup:

Lastly, what is fall without a good soup? Nothing makes me feel better when I’m sick than a nice bowl of homemade soup. Because of the season, I have a vegetarian-friendly Vegetable Soup recipe that will make your soul smile. Not only is this soup good for the soul, it is good for the body too! You can indulge in this flavorful soup all week long (soups are great leftovers) without feeling guilty!

If you’re missing home or just in need for some serious comfort-food, give these recipes a try. They are the perfect excuse to invite friends and make an event out of it, instead of spending the money going out. After all, nothing brings people together like a home-cooked meal!
