"I Could Eat You for Breakfast, Lunch, and Dinner"

Tuesday, February 16, 2010

My roommates and I decided to have a House Warming Party this past weekend in honor of our beautiful new apartment in Copenhagen. We spent all day on Saturday cooking delicious hors d'oeuvres for the party: spinach and artichoke dip, meatballs with tzatziki (complete with Danish flag toothpicks), cheese and crackers, roasted tomato bruschetta, homemade guacamole, and other yummy-ness.

I must say, however, the award for cooking one of the most delicious things I have ever tasted goes to my roommate Katey from Pittsburgh, who insists this recipe is a Pittsburgh-native classic. I hereby proclaim that Baked Buffalo Chicken Dip with toasted pita is literally the most amazing thing ever. EVER.

In case you are in the mood to be the most worshipped party host at your school, here is Katey's own personal recipe:

  • 1 package cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup blue cheese salad dressing
  • 12 oz chicken breast (cooked and chopped into small pieces)
  • 1/2 cup of hot sauce (preferably Frank's Red Hot)
  • pita, chips, or toast for dipping
  1. Preheat the oven to 350 degrees
  2. Stir in cream cheese in 9 in. baking dish with a fork or whisk til smooth.
  3. Stir in dressing, hot sauce, mozz, and chicken pieces.
  4. Bake for 20 mins or until bubbling.

Enjoy!
